However, importance should be given to the unit operations of food processing. PROJECT: First, it is assumed that apples contain in average 80% wt. of water, 10% of solids and the remaining are aroma substances and the weight of one apple is about 100 grams. It is supposed that only 85% of water and 95% of aroma can be extracted from apples. The concentrated apple juice contain 55% water, the remaining being aroma substances. In the final step, the dehydrated apple juice contains only 2% wt. of moisture and the remaining is aroma substances. PROJECT CONTENT:
